How to start sweet potatoes indoors

If you’ve embarked on the Paleo diet or something similar that is strong on real, non-processed food, chances are you’re eating a LOT of sweet potatoes. Maybe every day. In various forms.

sweet potatoesUnfortunately, gone are the days when supermarket sweet potatoes were dirt cheap. So many people are cooking sweet potatoes that prices have crept up. (Supply and demand, you know.)

So what to do if you eat a lot of the orange tubers and want to keep your grocery bill lower? Grow your own sweet potatoes!

They’re easy to get started. Think back to that elementary school science experiment where you cut a sweet potato in half, spiked toothpicks into it horizontally and suspended the half in a jar of water. You were likely amazed at how fast the sweet potato started sprouting its leaves out the top and roots down into the water.

To produce the “slips” that you’ll plant, do the same science experiment. And be patient. Mine are taking a few weeks to get the long sprouts needed for planting. But be patient. Once they get started, they’ll grow very quickly.

A little further along into the spring growing season, I will share how I prepare the soil and plant my slips. Until then … get those sweet potatoes started!
